I have set up a few pages within my site and set them on the info tab to use a certain document type. I was wondering if it is possible to change the document type once a page has been created?
Yep that is possible. If you right click the node in the tree you will see the context menu. There will be (depending on your rights) an option to change the doctype. You can even map how property data should be transfered.
