I've been looking at the release notes that says a new variant property editor was added in 3.1.
I've also been looking at the demo store to see how it works.
Prior to 3.1 variants were set-up as child products of the master product but this doesn't seem to be the case in the demo store.
Has the new variant property editor totally replaced the child node way of doing things?

You can still do it the old way. The property editor is just a new way of doing it. And you can use the demo store on github to see how things are done.
