Is it possible to turn off stock control? We either do not want to enter stock levels or not have the stock level updated when an order is made.
The end goal is to never have products go "out of stock".
I tried the documentation but it is all "under construction"!

Just dont add the stock property editor to your product doc type. That's it. TC never limits by stock. It is just a counter

I didn't setup the shop, doc types, etc, but at the moment if stock is zero or empty the front end shows "out of stock".
So is that not standard TC functionality?
No - that is something that was implemented for the frontend. So you should locate it and remove it. And also check if there is some server side check that limits the adding to cart, based on stock limit.
