Hey - in the content tab, I can see the Shop node and edit it, but a user who has limited access to certain areas of uCommerce can't.
I have attached a screenshot to show the settings I have aloocated.... do I need to add another for her to see it?

On the user in Umbraco you can set up which nodes should be accessible. You won't need a second user to enable it.
I have that setup, but havne't heard back from the client again, so I guess it was a cache problem
